About this wine

Wine Style:

Red - A rich, complex, and intense red that has a striking resemblance to traditional Barolo wines.

Tasting Notes:

Red intense, bright ruby colour. Full beginning taste, silky, balanced, harmonious and persistent. Ethereal, with notes of raspberry, blackberry and spices and a lingering finish.

Gastronomy:

Excellent with stews, braised meats, game, truffles and aged cheese.

Vineyards:

The Nebbiolo grape, widely grown in Monferrato in the pre-phylloxera age, characterizes this wine. The vineyards face south-southwest with limestone marl soil. The production per hectare is 5 t. Manual harvest takes place in early October.

Ageing method:

The ageing is carried out half in barrels of 225 litres and half in barrels of 30 hl, for a period of about 36 months, and after bottling it rests for at least 6-9 months.

Winemaking process:

The alcoholic fermentation takes place at a temperature of about 30'C in the early days, for optimum extraction of the anthocyanins, then continues at 28'C until the end, for gentle extraction of the tannins. The malolactic fermentation is carried out before the introduction of wood.

Vinoteka

Vinoteka's note

Six years from harvest to release: three years in second-use French barriques, then three more in bottle. Brick red; the fruit has given way to blond tobacco, leather and undergrowth; medium-full, with tannins that are present but velvety from the long ageing, and a long finish. Serve at 16–18 °C with brasato, game or eggplant parmigiana; it will keep for decades.

Written by the Vinoteka team from the producer's technical sheet.
