Wine Sottimano, Bric del Salto Dolcetto d'Alba, 2016
This dolcetto is a classic and raw expression of this unique variety. By allowing natural fermentation to take place, with minimal intervention and no filtration, this wine is rustic and excellent expression of its terroir. With no oak ageing, you also experience the wine's purest characteristics.
Characteristics
Wine Style:
Red - With an abundance of fruit notes and a lingering freshness, this wine was produced with minimal intervention and no oak.
Tasting Notes:
Bright ruby-red. Bric del Salto interprets the famous Piedmontese grape variety in a direct and classic way. Fruity bouquet combined with the typical Neive spice. On the palate, it is clear, with precise fruit, the right dose of fine tannins - and above all an inspiring freshness
Gastronomy:
This organic Dolcetto d'Alba is a true gastronomic wine; will work wonders with white meat or fish in sauce. Also great with baked desserts.
Vineyards:
The vines are now between 25 and 70 years old and therefore already carry a little less, which is why they hardly need to be thinned out.
Ageing method:
20 months in stainless steel tanks.
Winemaking process:
The fermentation and the maceration on the skins normally take about 12 days. No selected yeasts are used. The malolactic fermentation is completed in stainless steel, where the wine remains for approximately 6 months. There is no filtering and no fining prior to bottling.
