Wine Sottimano, Bric del Salto Dolcetto d'Alba, 2016
The Bric del Salto Dolcetto is the combination of three different vineyards of Dolcetto in Neive: Cottà, Basarin and San Cristoforo.
The “Bric Del Salto” Dolcetto is the result of the different soils of the “crus” in which the vines are grown. It is well balanced in all of its components, starting with its deep colour, its fruity, rich and elegant nose, and a complex, lingering and fresh taste.
Fruity, rich and elegant nose and complex, lingering and fresh taste. No wood ageing.
Bright ruby-red. Bric del Salto interprets the famous Piedmontese grape variety in a direct and classic way. Fruity bouquet combined with the typical Neive spice. On the palate, it is clear, with precise fruit, the right dose of fine tannins - and above all an inspiring freshness
This organic Dolcetto d'Alba is a true gastronomic wine; will work wonders with white meat or fish in sauce. Also great with baked desserts.
The vines are now between 25 and 70 years old and therefore already carry a little less, which is why they hardly need to be thinned out.
20 months in stainless steel tanks.
The fermentation and the maceration on the skins normally take about 12 days. No selected yeasts are used. The malolactic fermentation is completed in stainless steel, where the wine remains for approximately 6 months. There is no filtering and no fining prior to bottling.
