Winemaking process:
The Riesling grows on steep blue Devonian slate in the Zeltinger Schlossberg, from the higher, cooler parcels near the forest. It ferments spontaneously and slowly in traditional 1,000-litre Mosel Fuder casks and stainless steel, with long lees contact. Kabinett is the lightest Prädikat level, prized for its delicacy and low alcohol.

Kabinett from Zeltingen's smallest and steepest site, picked from the higher, cooler parcels near the forest on blue Devonian slate. Only 9% alcohol: crisp, light-bodied and crunchy, with restrained sweetness, bright apple acidity, herbs and a smoky, salty slate note. Lovely now and built to keep for twenty years. The Selbach family has made Mosel wine for four centuries, many vines still on their own roots.
