Gastronomy:
∙ Fish, meat dishes, cheese and seafood salads
∙ Avoid: Very sweet, intensely spicy or vinegar-heavy dishes
Ageing method:
Aged for 10 months with bâtonnage (lees stirring), followed by 2 months in bottle before release
Winemaking process:
Full destemming, followed by fermentation in new French oak barrels

Bâtonnage stirs the settled lees back into the wine, helping develop a fuller, smoother texture
