Wine Style:
Rosé - A dry rosé that captures the essence of traditional Provence wines. The nose is complex and floral.
Tasting Notes:
Pink marble dress. Complex nose dominated by citrus fruits followed by notes of red fruits. Enveloping and persistent palate where we find the fruity aromas of the nose raised by a floral finish.
Gastronomy:
Perfect on its own or paired with fish, seafood, light meals and soft cheese.
Vineyards:
The vineyard is located in a clay-limestone plain in the Var centre. It is located at an altitude of 150 m at the foot of the Massif des Maures enjoying sea breezes from the nearby Mediterranean. It enjoys one of the best microclimates of the Côtes de Provence. The average age of the vineyard is 15 years, with a density of 4000 vines / Ha. The average yield is around 50 hl / Ha.
Winemaking process:
The vinification of the different grape varieties is done separately, the Syrah is vinified by direct pressing, the Grenache and the Rolle undergo a slight pre-fermentation maceration. The juices are then settled, then carry out the alcoholic fermentation between 17'C and 18'C, the Malolactic fermentation is not carried out. We then proceed to a soft fining, then to an early bottling.
