White fish, seafood, risotto, creamy pasta, white meat and soft cheeses.
Vineyards:
A small organically farmed Viognier vineyard in La Seca, planted in 1999, yielding approximately 6,000 kg/ha.
Ageing method:
Aged on its lees for 6 months.
Winemaking process:
Separate portions ferment in stainless-steel tanks, oval concrete vats and 500-litre French oak barrels.
Interesting notes:
∙ This Viognier began with a fortunate discovery—a tiny Viognier vineyard hidden among the Verdejo-dominated landscape.
∙ Rhône-inspired winemaking gives the wine texture while retaining its Castilla y León identity.
