BlackBerry, red currant, thyme, damp leaves in an evolving nose. Palate is initially gritty then a good core of plush black raspberry and blackberry. Long finish Sharp acids and tannins are gripping and delicious. Medium bodied, edgy, savory, so good.
Gastronomy:
Perfect with cured salami.
Vineyards:
over 20 years old vines, clayey, sandy soil, grapes harvested end of September.
Ageing method:
in French oak barriques and barrels
Winemaking process:
in French oak vats at a controlled temperature between 22° C and 28° C
