Wine La Prendina, Cabernet Garda, 2018
When defining a typical Cabernet Sauvignon, this wine ticks all the boxes. It has the body, the structure, the length and the complexity that all good Cabernet Sauvignon should have.
Red - This wine defines a typical Cabernet with its body, structure and complexity, and range of aromas.
Bold, dry, savory, well balanced. Good and soft tannin that gives strength to the already great structure. The favorable pedoclimatology of the place makes this cabernet a precious expressive example of the pyrazinic notes typical of the variety with total absence of herbal and vegetable hints.
Risotto, salami, red meat, seasoned cheese, beef, lamb, game.
The aging takes place in small barrells which are not new and in contact with fine lees for at least 8 months.
During the fermentation regular pumpings alternate with some delestages. The temperature profile is expected to start at 25 ° C on the first day and then continue at about 20 ° C. The malolactic fermentation is done at the same time as the alcoholic fermentation in order to preserve the olfactory nuances of the fruit.
