Vineyards:
230m altitude, southeast exposure, limestone and marl soil. Guyot training. 5 000 vines per ha, 6.5 tons/ ha harvest.
Ageing method:
in stainless steel for 8 months
Winemaking process:
Manual harvest, destemming-crushing, one-night cold (10°C) pre-fermentative maceration is carried out without pumping over. Inoculation of selected yeast strains the following day starts the alcoholic fermentation. maceration is short and lasts maximum 5 days. The temperature is maintained at 25°C throughout the process.
