⤍ Pronounced stony minerality and herbal notes, complemented by citrus, especially grapefruit.
Palate:
⤍ Rounded, smooth and vibrant, with tension, balanced acidity and an elegant structure.
Finish:
⤍ A long, fresh finish with lingering grapefruit, herbs and minerality.
Gastronomy:
Oysters, clams, mussels, prawns, crab, white fish, oily fish, smoked foods, fresh cheeses and charcuterie.
Ageing method:
Aged on its own lees for 5 months.
Interesting notes:
∙ Rueda is best known for Verdejo, yet José Pariente planted Sauvignon Blanc here more than 40 years ago.
∙ The continental climate and poor, stony soils give the variety a distinctive mineral, herbal and rounded expression.
