Wine Dal Cero, Valpolicella Ripasso Superiore DOC, 2019
Classic ripasso. Characteristic aromas of dried/candied fruit. Blackberry, plum, date. Hints of smoke. Round and ample. Soft tannins, remarkable acidity, which Ripasso sometimes lacks. Charming persistance.
Medium acidity, red fruit, plum, smooth oak, some vanilla. bold and balanced.
Oak tones, red & black fruit & liqourice. Mouthfeel is complex and full of flavours: forest fruit, blue-blackberries, herbs & oak. Balanced with medium acidity, tamed tannins.
Stews and braises with polenta, game, beef strips with porcinis, roast lamb, and medium-aged cheeses.
The vineyards lie in the eastern section of the DOC area of Valpolicella, near Verona in the Veneto region, elevation 300 metres. Training system Traditional Verona pergola and Guyot. The grapes are picked exclusively by hand.
Approx. 12 months in large oak casks and 20hl oak ovals
