Wine Style:
White - An intense wine with fresh, flinty, and plenty of floral aromas. Typical Gavi example.
Tasting Notes:
Straw yellow colour. Intense floral nose. Apple, pear, almonds complemented by earthy mineral notes and rounded off with refreshing hints of citrus, lemon, grapefruit, and honey. The supple palate echoes with fragrance.
Gastronomy:
Pairs fantastically with pasta, seafood, salads and cured meats.
Winemaking process:
Soft pressing to extract the very best from the fruit. Fermentation takes place slowly at a controlled temperature to maintain the typically rich aromas of the Cortese di Gavi varietal and lasts for up to 20 days. The wine is bottled in February or March to allow minimal ageing period in bottles before the wine is sold and to make sure it reaches a certain level of maturity and balance.

Salluvii is the ancient name given to the people who lived in the Gavi region in the past.
