Despite its age, this Gavi demonstrates no sign of maturity, with layers of minerality and vibrant fruits. Accompanying this vibrancy, is a plethora of exotic spices, richness and strength that only a prime Gavi wine is capable of.

Wine Style:
White - A rich wine with great minerality, vibrant fruit, exotic spices, and lingering notes of vanilla and oak.
Tasting Notes:
Beautiful pale lemon colour. Delicate aroma of spices, mixed with hints of sweet honey and jam, vanilla and oak. The palate has a rich, smooth taste of fruit with pleasant salty and mineral nuances.
Gastronomy:
This wine is well served with white meat dishes, poultry, fish, seafood and vegetables.

Winemaking process:
After partial drying for 30-40 days in trays, the grapes undergo light pressing to extract the best from the fruit and this is followed by separation of the first sediment and fermentation. The fermenting must is transferred to barrels where it will complete its alcoholic and malolactic fermentation and remains in barrels until the following September without further racking. Racking takes place after this process is complete, and light clarification also precedes cold-stabilizing and bottling. It will be placed on the market only two years later when the wine has reached the proper level of maturity and balance.

Cortese is a white grape variety that is most famous for its role in the crisp, lime-scented wines of Gavi. The variety is known for its bracingly high acidity and its ability to retain freshness, even when grown in hot environments.
