Characteristics
Wine Style:
Deep ruby red. Fresh, with red fruit and vanilla shades.
Tasting Notes:
Medium ruby in color with a developing medium intensity nose. Red cherry, oak, leather, earth, raspberry, cedar. Dry, high acid, high tannins, full bodied, high alcohol and medium plus intensity on the body. Cedar, baking spice, red cherry, red plum, tobacco, vanilla.
Gastronomy:
Pasta with meat ragout, roasted white and red meats, mushrooms, cold meats and cheeses.
Ageing method:
In Slavonian oak casks of 20 to 32 hl for 6-10 months; followed by ageing in bottles for at least 3-4 months.
Winemaking process:
Alcoholic fermentation with maceration of the skins (18-20 days) at a controlled temperature and spontaneous malolactic fermentation, both in truncated cone-shaped Slavonian oak casks. (where it stays for 6-8 months).
Interesting notes:
With deep ruby red, good structure, slightly tannic, persistent. Red light fruit, with well-integrated oak. Light vanilla, with well-balanced acidity.
