Wine Boscarelli, Vino Nobile di Montepulciano DOCG "Toscana", 2020
Vino Nobile di Montepulciano is usually maroon-red in color and takes on a subtle brick-orange tint over time. It is characterized by its dark cherry and rich plum aromas, ripe strawberry and cherry fruit flavors, and a gently tannic "tea-leaf" finish.

A nice ruby red wine with floral notes and a light touch of sweetness. Slightly acidic and full of ripe fruit. Very dry, but fruity, full bodied and flavorful spicy, full in the mouth yet light feel. Cherry hints.
Tasting Notes:
Nose: cherry, cranberry, some smoke, tobacco. Palate: cherry, raspberry, good acidity, some tobacco, red fruit finish. Easy to drink. Notes of cocoa, leather, tobacco, and red cherry on the nose. The palate is rich with cassis and cherry with a note of dark chocolate.
Gastronomy:
Beef, Poultry and game (deer, venison)
Vineyards:
Cervognano
Ageing method:
This Nobile vintage is aged in Allier or Slavonian oak casks of capacity ranging from 5 to 35 hectoliters, where malolactic fermentation occurs. Maturation takes from 18 to 24 months. Before delivery the wine is aged in the bottle for several months
Winemaking process:
The grapes are fermented in oak vats filled to no more than two-thirds of their capacity. Indigenous yeast is used in the fermentation process that lasts about a week at controlled temperatures from 28 to 30degrees. Short manual re-passing of the must and pomace is completed in the initial phase. Pulping continues, where possible, for another 5 to 8 days after fermentation.
Interesting notes:
Vino Nobile di Montepulciano must contain at least 70% Prugnolo Gentile (aka Sangiovese). Powerful dense, astringent tannins, fresh but strong in the finish.
