White - A great example of a hand-crafted gem, which has resulted in natural effervescence, freshness, and fruitiness.
Tasting Notes:
Pale straw yellow with a distinctly floral nose. On the palate fresh, fruity and lively. Balanced with a medium finish.
Gastronomy:
Pairs delightfully with fish soups, delicate fish, boiled or fresh vegetables, salads, pasta, rice, sandwiches, snacks, and pizza.
Ageing method:
At the end of fermentation, resting in big stainless steel tanks and, after sterile filtration, bottling (late winter).
Winemaking process:
Harvesting in mid September. Soft pressing, without removing the stalk from the bunches. Using pneumatic presses to avoid over-extraction of the grapes to avoid unwanted components. Refrigeration of the must at 6 to 8'C, to block any beginning of fermentation and to favour the natural decantation of the skins. Selected yeasts are put into the must, already cleaned, for a correct fermentation at 16-20'C. With this procedure, its fruity characteristics are preserved.
