Brut is the most common style of Champagne, Cava and other traditional-method sparkling wines, with less than 12 grams of sugar per litre. The small dosage of sugar balances the high natural acidity, so the wine tastes dry, fresh and crisp rather than sweet. Brut sparkling is very versatile at the table: try it with chả giò, tempura or salt-and-pepper squid, well chilled at 6–8°C.
