⤍ Long and relatively dry, with orange peel and honey notes.
Gastronomy:
∙ Smoked ham, pâté, garlic mushrooms, walnuts.
∙ Avoid: Very sweet desserts, intensely spicy dishes.
Vineyards:
Volcanic soils; Latada or espalier training
Ageing method:
Canteiro maturation, with gradual warming and slow oxidation.
Winemaking process:
Grapes are pressed, then fermented in stainless steel; grape spirit stops fermentation at the desired sweetness.
Interesting notes:
Canteiro maturation slowly develops the wine’s flavour through warmth and oxygen during barrel aging.
