Ageing method:
At the end of the first fermentation, filtration and resting in big stainless steel tanks. The vivacity and the freshness of this wine are obtained from a second fermentation, with selected yeasts, in big airtight tanks (autoclaves). After a second sterile filtration, bottling begins late winter.
Winemaking process:
Harvesting in mid September. Soft pressing, without removing the wood from the bunches, by using pneumatic presses, to avoid damages and over-extraction of the grapes, which could bring some unwanted components to the wine. Refrigeration of the must at 6 to 8'C is done to block any beginning of fermentation and to favour the natural decantation of the skins. Selected yeasts are put into the must, already cleaned, for fermentation at 16-20'C.
