Corvina wines
Corvina is the main grape of Valpolicella in the Veneto, northeast Italy, used for Valpolicella, Ripasso, Amarone and sweet Recioto. Its grapes take well to appassimento, the drying of harvested bunches for months to concentrate sugar and flavour before pressing. Corvina gives sour cherry, almond and herbal notes; a light Valpolicella suits pasta and pizza, while Amarone calls for rich braised meats.
