Wine Style:
A dry Brut Nature sparkling wine, traditionally known as Cava. Certified Kosher and Mevushal.
Tasting Notes:
Fresh and vibrant aromas of green apple and citrus, with a hint of natural bitterness. Pale yellow in color with fine, persistent bubbles. The palate is crisp and refreshing, leading to a dry and elegant finish.
Gastronomy:
Pairs well with aperitif, seafood, salads, soft cheeses..
Winemaking process:
Made by the traditional method, with a second fermentation in the bottle and ageing on the lees, then finished as Brut Nature with no added sugar. Production is kosher-supervised and the wine is mevushal (flash-pasteurised). Xarel·lo, the backbone of this Cava, is the Penedès grape prized for giving sparkling wines structure and the ability to age.

A kosher, mevushal cava from Pinord, a Penedès house founded in 1942 that claims the first lightly sparkling wines in Spain and the first Demeter-certified biodynamic wines. Traditional method from Xarel·lo, Macabeo and Parellada, aged on the lees, with no dosage at all. Pale straw with a fine, persistent bead, lemon peel, green apple, chalk and a bready note, bone dry with a saline finish. Serve well chilled as an aperitif or with oysters, sushi, salads and soft cheeses.
