Characteristics
Wine Style:
White - An easy, fruity, summer's day wine with concentrated fruit and beautiful vibrancy.
Tasting Notes:
Pale lemon yellow. Intense aromas of ripe citrus lime, stone fruit and fresh-cut grass in this medium-bodied, fresh palate. Ripe fruit character is balanced by crisp acidity and moderate alcohol having a lingering finish.
Gastronomy:
Pairs exceptionally with citrus, avocado, salmon ceviche and fried calamari. It is a 'must-have' with green papaya salad!
Vineyards:
The Casablanca Valley is 18 km from the Pacific Ocean. The age of the vines is on average 20 years. Cool maritime climate prevails with a strong influence from the Pacific Ocean due to its proximity. Decomposed granite soils.
Ageing method:
The wine was aged for 6 months in stainless steel tanks with its fine lees.
Winemaking process:
Grapes are destemmed and lightly pressed avoiding extraction of bitter phenolic characteristics. The juice is left to settle and alcoholic fermentation is carried out in stainless steel vats with natural yeasts at ambient temperatures that range from 14C to 16'C. Malolactic fermentation is blocked and the wine ages with its fine lees.
