White wine is usually made from pale-skinned grapes whose juice is pressed off the skins before fermentation, giving fresh acidity and almost no tannin. Styles range from crisp, citrusy Sauvignon Blanc and Riesling to rich, oak-aged Chardonnay. Serve well chilled at 8–12°C; whites are a natural partner for seafood, fresh herbs and dishes seasoned with fish sauce and lime.
