Rosé gets its pink colour from a brief contact between the juice and red grape skins, usually just a few hours. Provence in southern France is its most famous home, known for pale, dry rosés, while Spanish rosado and Italian rosato are often deeper in colour and fruitier. Served cold at 8–10°C, a dry rosé is wonderfully versatile with Vietnamese food, from spring rolls to grilled seafood.
