Off-dry wines keep a small amount of natural grape sugar, roughly 4–12 grams per litre, enough to soften the acidity and add a hint of fruit sweetness without tasting truly sweet. German Riesling Kabinett, demi-sec Vouvray and many Gewürztraminers are classic examples. That touch of sweetness tames chilli heat, making off-dry whites an excellent match for spicy Vietnamese, Thai or Sichuan dishes.
