Fortified wines have grape spirit added, raising their alcohol to roughly 15–22%. Adding the spirit during fermentation, as with Port, stops it and keeps natural grape sweetness; adding it after fermentation, as with fino sherry, gives a dry wine; Madeira and Marsala are other classics. Opened bottles keep longer than table wine; in a warm climate, serve slightly chilled in small glasses.
