Characteristics
Wine Style:
Red - This wine is an extraordinary easy-drinking red wine with intense but delicate fruit aromas and no oak-aging.
Tasting Notes:
Ruby-red colour with delicate violet reflections, an intense vinous fragrance with enveloping notes of marasca cherries, blackberry jam and violet, fresh, fragrant and dry with a typical pleasant almond finish and soft tannins in the mouth.
Gastronomy:
A versatile wine for a whole meal. It is a fine match for starters and first courses. It is also excellent with medium-aged cheeses.
Vineyards:
A single vineyard, an ancient clone with the “redstem”, planted in 1966 and exposed South, South-West within the Sorì del Ricchino, Diano d’Alba (CN) at 350 m above sea level. The soil is clayey with sandy integration, very abundant silt and alkaline pH.
Ageing method:
Stainless steel and bottle.
Winemaking process:
The harvest is done strictly by hand and the bunches are collected in small crates of 20 Kg in order to preserve their integrity until they are crushed in the cellar. The yield per hectare is about 38 hl. In order to preserve the delicate aroma of marasca cherry, typical of Dolcetto grapes, and in full respect of tradition, there is no wood ageing. Therefore, once completed the malolactic fermentation in temperature-controlled stainless steel tanks with soft maceration of the grapes for 8-10 days, it matures in stainless steel for 6-8 months. After bottling without filtration, it ages at least 3 months before release.
