Rich honey and pear without sweetness. Like an aged Sauternes in aroma and color, but brighter and more complex. Apple and mead.

Vineyards:
Grapes come from 3 very different sites. Forest, hillsides, field. They are of great balance and concentration thanks to the high plant density and manual harvesting and maceration at controlled temperature
Ageing method:
French oak barrique followed by aging in bottle
Winemaking process:
cryomaceration in pressing for 12 hours and fermentation in French oak barrique. It ages on its lees for the whole period with frequent batonnage, followed by aging in bottle
Interesting notes:
is affected by the powerful influence of sea and mountains that contribute to the full phenolic maturity of the grape.
