Winemaking process:
The grapes for this white wine cuvée were handpicked with great care and a great deal of know-how and transported to the winery in small 20kg baskets in the early hours of the morning. The grapes were initially cooled down to controlled temperatures overnight and then prepared for the fermentation process the next morning. The grape varieties fermented separately and then matured for 7 months, also separately, in French barrels, in wood foudre and in concrete tanks. When the maturation was complete, all wines were blended and bottled.
Interesting notes:
The name Lammershoek dates back more than three centuries, linked to survival or the preservation of life in a harsh, untamed environment. Meaning “lambs’ corner”, legend has it that ewes sought shelter for their small lambs in the forest alongside the farm when they felt threatened by the black eagle which abounded here – locally known as the Lammervanger, meaning “lamb catcher” in the Afrikaans language.
