Tasting Notes:
Balanced, featuring bright cherry and raspberry fruit flavors, with light flourishes of earth and iron, all supported by well-integrated tannins. Fruity fragrances of cherry, blackberry, mineral and spice are dry and supple on the palate. Elegant, yet juicy and smooth finish
Gastronomy:
Beef and Venison, poultry, pork, red meat and game. Ligurian rabbit / Medium-aged cheese / Pappardelle with hare sauce / Risotto with sausage / Cooked pork products
Ageing method:
Storage for 3 months in 33hl Slavonian oak barrels, and 6 months in bottle refinement. Ageing possibilities is 10 years
Winemaking process:
The grapes are handpicked and then gently pressed; fermentation in stainless steel tanks at a controlled temperature of 26° – 28°C; and maceration for 15-20 days.
