The quality of this wine is hard to beat, and is mainly due to the care taken in the vineyards. With a great terroir-expression and structure, it becomes apparent why this is one of Italy's famous wine-styles.
Characteristics
Wine Style:
Red- This wine is an intense and aromatic red that has tremendous red fruits while remaining well-balanced.
Tasting Notes:
Intense and well-structured on the nose, it emanates hints of blackberries, china, rhubarb, face powder and spices. On the palate is stands out for its subtlety and freshness at the same time, with strong and lively tannins which are, however, perfectly integrated into one velvety and caressing body. The finish is lengthy in its fruity notes and is juicy and well-rounded.
Gastronomy:
beef, game, poultry, guinea fowl stuffed, venison with apple puree, fettuccine with meat sauce, Capretto alle olive.
Vineyards:
From 15-40 years old vines planted in a South/Southwest exposure in the crus of Martiena, La Ciarliana and La Piaggia. From 250-350 meters above sea level. The vineyard cultivation practices draw from some biodynamic principles, and therefore sees copper and sulphur as the only substances used, as well as abundant inter-row grassing. The cellar, equipped with geothermal system and located at a depth of 7 metres, is perfectly integrated into the environment.
Ageing method:
24 months in 33hl Slavonian oak barrels 6 months in bottle refinement.
Winemaking process:
Gentle pressing; fermentation in stainless steel tanks at a controlled temperature of 26° - 28°C; maceration for 15-20 days.
